if you're serious about cooking, these favourite items should be at the top of your shopping list. Matt Preston reports.

When you watch food shows, you could be mistaken for thinking you can't make a decent meal without $30,000 of equipment that looks like it has stepped out of a well-stocked laboratory. while kit like a Thermomix, blast chiller, immersion circulator, Pacojet and vacuum packer help top chefs feed the hordes and create innovative new dishes, for me these aren't the essentials of the home kitchen.

Neither, for that matter, are half the appliances I have amassed over the past 10 years. the deep fat fryer, pie warmer, popcorn machine, slushie maker, candy-floss machine and certainly one of my two sandwich makers would be off the roster if there was a salary cap on my kitchen aids, as I seldom use them.

Sometimes I fear that rampant consumerism and a footy-card collector's desire to collect "the complete set" get in the way of seeing what is really important in a home kitchen. With this in mind, I've made a list of what's probably actually necessary in my kitchen - fully aware that, when I return home next, I may find those things not on the list have migrated to the hard-rubbish collection.

  • The best chef's knife and paring knife you can afford. choose the size of knife that suits the job - so a paring knife for peeling shallots and the cook's knife for dealing with slabs of meat. Make sure these are regularly sharpened professionally. Treated with respect, a sharp knife will cause fewer accidents than a blunt one. Remember that honing the edge of the knife with a steel helps realign the blade but does not really sharpen it. I also like to have a cheap, sharp, serrated knife handy.
  • A mandolin is brilliant for quickly slicing fruit and veg. this flat-bed with a razor-sharp blade mounted in it has wheels under the blade which allow you to choose how thick the slices will be. the mandolin is responsible for a disproportionate number of kitchen injuries so always use a guard to hold what you are slicing when using a mandolin.
  • A sharp vegetable peeler is vital not only for peeling but also for taking strips of zest off citrus fruit without any of the bitter pith, and for shaving stuff in decorative curls, whether it's hard cheese like parmesan, cucumber, carrot or chocolate.
  • You also need measuring cups, spoons and a good set of electronic scales that can measure in ounces and grams. to make recipes work, you need to be accurate in measurements, so these are essential. US measurements can be different - such as tablespoons and cups - so make sure these are of the Australian standards. and that your recipes are. Oh, and keep a spare battery for the scales in the box, as you can bet your scales will run out of power when you need them.
  • Cooking is all about transferring heat in various forms to a product. Its state of "doneness" is set by how much the food has been warmed through. an electronic thermometer will take so much of the guesswork out of cooking meat and fish, as well as assessing more severe temperatures like caramels. they will cost between $20 and $40 but save you ruining stuff.
  • A grater is a basic tool of the kitchen but a microplane will allow you to zest and grate far more finely.
  • A fine sieve is important as it will allow you to get a silky fine texture in your sauce, mash potato and soups. if you have a round-bowled sieve, a ladle will help you press the juice through quickly. I think a little mesh tea strainer is helpful for small quantities.
  • A wooden spoon and a slotted spoon are both very useful but also investigate silicon. Silicon is great because it is easy to clean and can stand high temperatures without melting.
  • A fine silicon-bladed spatula is great for flipping and stir-frying, while its flexible, plasticlike blade is great for scraping everything out of bowls for minimal waste. (This is something which the kids may not appreciate when it comes to scraping out the cake mix.)
  • A good non-stick frying pan with a metal handle is not just great for minimising the amount of butter and oil you use but is easy to clean. You can make everything from omelets to frying, sauteing or even making a sauce.
  • A good heavy metal pot with metal handles is expensive but it will last a couple of lifetimes. It's brilliant because it can be used on the top of the stove as well as in the oven. It is great for everything from stewing and braising to frying, as well as pot-roasting, baking and casseroles. A heavy base means that it's good at conducting heat evenly. Wait for the sales when the cost of pots, such as Le Crueset, will often drop by $100.
  • A long, fat, wooden rolling pin is useful for everything from rolling out pastry and pasta to beating stuff. Pick one that feels comfortable.
  • Various mixing bowls. I have a large stainless-steel one for mixing doughs and whisking eggs. I also have a range of cream earthenware ones which I suspect originally held Christmas puddings. These act for everything from mixing to holding stuff while I cook - including messy, drippy kitchen implements.
  • When it comes to plug-in kitchen appliances, there is the electric whisk, which takes all the hard work out of creaming butter for cakes and whisking egg whites, and the stick blender. this can do everything from making mayo to pureeing stock and sauces, or even just frothing them up to make dishes look pretty. More expensive are a powerful liquidiser or a food processor.
  • Less obviously versatile and more of a luxury item but certainly needing to be on the Christmas list are the ice cream machine, slow cooker and the table-top pizza oven.

    I love these three because they allow you to do things other kitchen appliances won't. sure, you can freeze ice cream in the freezer but the ice-cream machine keeps churning it while it is setting. slow cooking is a culinary art form all of its own, while the big heating elements of the pizza oven generate the heat needed to cook perfect pizza at home. Suitably, this week's recipe could be used to highlight the strengths of a number of my kitchen essentials. good luck - and don't forget to let Santa know which of these you feel you need for Christmas. After all, it is only 123 days away!

A knife, a sieve, a food processor, a pan... all good recipes deserve the right utensils.

PARSNIPS WITH DATE PUREE, CELERY SALAD & MOROCCAN LAMB

Ingredients:

  • 2 x 6 cutlet racks of lamb
  • Ras el hanout (see note) spice mix (if you can't find ras el hanout, toast and then grind together to a powder 1/4 tsp cumin seeds, 1/2 a blade of mace, a cardamom pod, 1/4 tsp black pepper, 1/2 tsp coriander seeds and 1/4 tsp cinnamon)
  • 1kg parsnips
  • 1/2 cup cream
  • 1/2 cup milk
  • 1 cup dried pitted dates
  • 150ml water
  • 90ml muscat
  • 4 sticks of celery plus a few young celery leaves
  • 1 tbsp red wine vinegar
  • 1/2 bunch flat leaf parsley
  • 1/2 bunch mint
  • 8 soft/fresh dates, pitted
  • Juice of 1 orange
  • 50g quince paste, chopped into 1cm pieces (see note)
  • 50g butter

Method:

  1. Rub the lamb racks with the spice mix. Cover and leave by the stove. Peel the parsnips, cut off the tops and any straggly tips. Bring to the boil in cold water and simmer for 20 minutes until cooked. Blitz them in a processor adding the milk and cream bit by bit until the right consistency is achieved. You should end up with a smooth puree with a texture of creamy mash potato.
  2. Cook the dried dates slowly in half the water and the muscat for 10 minutes, stirring to ensure that they don't boil dry. Mash the dates and add the remaining water. You should have a thick stringy paste. Pass the mixture through a fine sieve to remove those fibres. You will be left with a fine date puree.
  3. Cook the meat in a pan making sure you brown all sides. Remove the meat after cooking to rest under foil for 10 minutes.
  4. Finely slice the celery into thin crescents. Pour in the vinegar and swish the celery round in it. Pour off any excess after doing this. Toss with 1/3 the amount of chopped parsley. Garnish with picked celery leaves.
  5. Tear the mint leaves (you should have about 1/3 cup) and place in a bowl with the fresh dates, orange juice and chopped quince paste. Toss to combine.
  6. Gently warm the date and parsnip purees. Whisk small hunks of butter into the warming date puree to make it extra velvety - this will also make the puree less fruity.
  7. Slice the cooked racks and plate with a dollop of parsnip mash, date puree, mint and date salad and a pile of celery salad for crunch and freshness.

Note: Meaning head of the shop, ras el hanout is a Moroccan mix spice that differs from kitchen to kitchen but might include any or all of the following: black pepper, cumin, coriander, cardamom, mace, licorice, ginger, allspice, cinnamon or other aromatics.

If quince paste is unavailable, fold a tablespoon of red currant jelly through the mint and date salad.
