We purchased this rice cooker last week, and have used it twice for brown rice. The rice came out better (and with less effort on our part) than any other cooking method we’ve ever used. It was, in short, the best brown rice we’d ever had anywhere.

We also tried out the warming function, in which the machine keeps rice warm for up to 12 hours on normal warm mode–there’s also an extended warm mode for up to 48 hours. after about 8 hours on warming mode, the rice was virtually the same as when it had just been cooked.

The machine could not be easier to use. Build and material quality appear first rate. The rice pan is heavy duty–same for the non-stick coating. very quiet in operation, very easy to clean. All sorts of little details that suggest many cycles of refinement in the design. Aesthetics are delightfully Japanese. The stainless steel side and top panels appear as an afterthought designed to fit Western tastes.

One thing I haven’t seen anyone else mention about Zojirushi rice cookers. On the last page in the owner’s manual there’s a footnote which suggests vaguely that this rice cooker may not function well at high altitude. Since I live in Santa Fe at 7,000 feet, I called Zojirushi USA and asked about this. They told me that their rice machines do not function well above 3,000 feet, and that I should return the machine I purchased. well, instead, we tried it at better than double its supposed elevation limit, and as mentioned above, it worked perfectly–so it’s hard to imagine that it might work MORE perfectly below 3,000 feet. Suffice it to say that if you live in Denver, Albuquerque or Santa Fe, you can ignore Zojirushi’s disclaimers about poor function at higher elevation.

All in all, this is a superb product that combines the otherwise mutually exclusive benefits of perfect rice with set and forget automation. The folks at Zojirushi USA (aside from their apparent ignorance about cooking rice at altitude) are informative and friendly. we tend to buy the best kitchen equipment we can find just to avoid the hassles of unreliability. Accordingly, we’re difficult to please, and this machine meets our (very high) standards.

LONG TERM USE UPDATE (January, 2009):

This machine has continued to function flawlessly. Apparently Zojirushi induction rice cookers aren’t well known in northern new Mexico, since whenever we have a dinner party and rice is on the menu, our guests are always intrigued by this thing, and regularly end up buying one of their own.

One clarification: the cooking bowl is stainless steel, as is the inside cooking bowl cover. Apparently these parts tend to be aluminum on the vast majority of computerized rice cookers, even those from Zojirushi. The bowl is coated in some sort of very heavy duty anti-stick coating–after a year or two of use, the coating still looks new–it hasn’t started flaking off at all. I would guess that boiling water (which is basically what rice cookers do) isn’t too hard on the coating, and we’re probably not poisoning ourselves, the way we might be if we used non-stick pans (which we don’t).

Reference my comments above about Zojirushi rice cookers working perfectly at high elevation (which was news even to Zojirushi), I’ve since heard that high elevation performance may be better with induction rice cookers than with computerized rice cookers with standard heating elements. Who knows. What is definite, however, is that as of this writing this machine has functioned perfectly at 7,000 feet for almost two years.

the Japanese eat rice daily. So we all know how to prepare themselves. but people not used to cook the rice with a rice cooker and there are simple steps to follow to ensure that you are in a position as possible to the best taste is rice.

4 steps as the title when I do, to follow. what my laughter as I read:

I deal with everythese steps in order. First, it is important to wash the rice before cooking. Instead of dirt, the goal when you wash the rice, rinse the excess starch from the grain surface. the first thing to do is collect the desired number of cups of rice in a bowl-stick kitchen does not cook rice. Then add a bit 'of water. Just use your fingers to begin to turn around the rice and water.

You will notice that the waterMilky Way begins to turn. when there is a thick white paint, pour water into the sink. Then add more water and repeat. it is traditional to do it three times. even if you are not satisfied that your rice water is clean enough, just go, until the color changes little when mix around the bowl.

Once you wash the rice, be sure to add just the right amount of water in cooked dishes. it 's easy, just fillmark the number plate, the food is equal to the number of cups of rice in the kitchen non-stick. You can then place the bowl in a pot to cook the rice itself. Instead of right, in my rice sit for a few minutes minutes, preferably 5-10. So we can start absorbing some of the water.

Thirdly, please start a pot for cooking rice, and take care of cooking rice. Cooking is easy as youto do nothing. However, the preparation before cooking is important to ensure the best tasting rice.

Finally, after completion of the rice to cook, but it is now, it is better to do it for a few minutes. You can also turn the temperature down. Leave the rice in minutes, rather than serve immediately makes it less likely to stick cookware. when ready to serve rice at the bottomServing spatula before use is to reduce the amount of rice that sticks to the spoon the service. And these are the simple steps to great tasting Japanese rice every time.

Making rice with a rice cooker is very simple. I heard people in the United States often rice in a pot. But in Japan, which seems to us very strange. Ingredients
Grain + Vegetables + Protein (tofu or tempeh) + Garnishes + Sauce

Equipment
Cutting board and knife
For the grain: saucepan or rice cooker
For the sauce: blender or food processor (optional)
For the vegetables and protein: saucepan with lid and steamer basket or heat-resistant colander

Instructions

1. Cook the grain: this one-bowl meal is a great way to use leftover and reheated grains, in which case you can use any kind you like. If making it on the spot, choose a quick-cooking grain like quinoa (about 15 minutes), bulgur (about 20 minutes), or pearl barley (about 30 minutes).

2. make the sauce: The sauce is what really makes this bowl. Whip it up while the grain is cooking, or make it ahead of time and refrigerate until needed. here are a few good recipes:

  • Avocado Dressing (The Kitchn)

  • Curry-Coconut Sauce (Real Simple)

Cut them into uniform sizes to ensure even cooking. fill a saucepan with an inch or two of water and place the steamer basket or colander inside, and bring to a boil. Layer the vegetables and protein in the basket, placing heavier, dense items (root veg, tempeh) on the bottom and lighter items (leafy greens, tofu) on top. Cover the pan, reduce heat to medium, and steam until everything is just cooked. (See How To Steam Vegetables for detailed instructions.)

4. Prepare the garnishes: Garnishes add a nice bit of color, texture, and flavor to the bowl. Try fresh herbs (cilantro, basil), nuts and seeds (peanuts, almonds, pumpkin seeds, sesame seeds), dried fruit (raisins, currants, cranberries), or chopped scallions, onions, or sweet peppers.

5. Assemble and serve: Place a scoop of the grain in the center of each bowl, arrange vegetables and protein on top, and garnish. Drizzle the sauce just before serving or let people add it themselves.

Additional Notes:
• We haven't included specific quantities here, as it's meant to serve as a general guide that you can adjust according to your preferences and needs. However, in general we suggest about 1/2 cup of cooked grain, 2 cups of cooked vegetables, 4 ounces of tofu or tempeh, a couple of tablespoons of garnish, and up to 1/4 cup of sauce per person.

If you purchase one of the new style Japanese machines, such as those featured above, then you will also need to know how to use a rice cooker. While the more expensive models can actually do more than the cheapest rice cooker, they are actually very simple to use. the best rice cooker is one that allows you to make the sorts of rice and rice dishes that you and your family want to eat. the good news is that regardless of the rice cooker that you buy, they are actually very easy to use. in fact, if you get a Micom rice cooker then there are only a few things that you have to do because the rice cooker itself takes care of the cooking procedure.

How to make rice

If you want to make plain white rice then all you have to do is follow these steps. These instructions are to make 1 cup of rice.

  1. Measure out 1 cup of rice. to ensure the most accurate measurement, level the cup off with a chopstick or knife.

  3. Add some water to allow you to wash your rice. I add quite a bit to wet the rice then pour most of it away to make the rice easier to wash.
  4. Use your fingers to gently massage your rice. Add more water and pour off the “dirty” white water.
  5. Repeat this a few time until you are happy your rice is clean.
  6. Finally just add water up to the level 1 mark on the inside of your rice cooking bowl.
  7. Dry off the metallic bowl on the outside and put it back in your rice cooker.
  8. Your rice is now ready to be cooked.
  9. Some Japanese people let the rice sit in cold water for a few minutes before turning the machine on.

If you are using a Micom rice cooker then once you press start, there is nothing you need to do other than wait for your rice to be cooked. when it beeps to let you know it is ready you should open it to give your rice a stir to release excess moisture and let it sit for a few more minutes before serving. However if you have an Induction Heating model such as the Zojirushi NP-GBC05 then you do not need to do this step. if you want to know how to use a rice cooker, this is all you really need to know.

I am in the process of shooting a video of me preparing my rice which I look forward to posting on this site. it should help give a visual representation of the steps I described above.
